Super Simple Superbowl Spuds

I know Super Bowl was yesterday, but these homemade potato fries can be made pretty much at any time for any occasion, because they are simply the speediest and yummiest things ever!

We were invited to a Super Bowl party this weekend, and I think all of us there were more excited to see the halftime show than the game itself! Either way, I was cheering for the Seahawks (even though I don’t actually follow or understand football at all) and was pretty surprised when the Patriots intercepted that last play (is that even what I should be calling that interception?)…

Anyways, the guys at the party were all pretty impressed with the fries, so here we go!

You will need:

  • 2 or 3 medium Yukon Gold potatoes, scrubbed but not peeled
  • 2 tbsp. of canola oil
  • 2 tsp. of curry powder

Half way through baking time… Nice and golden and crispy!

Mix all the ingredients together and place them on a baking tray that is lined with parchment paper. Bake them at 350 degrees for 35 minutes, flipping them over half way.

While they are in the oven, you can make a super simple sour cream dip to go with them!

You will need:

  • 3/4 cup low fat sour cream (low fat yogurt or Greek yogurt is a good alternative as well)
  • juice of half a lemon
  • 2 garlic cloves
  • handful of chopped chives

Mix everything together, and adjust to taste!

There you go! Within 30 minutes, you have a super simple and pretty healthy Super Bowl snack, or an appetizer for any other day!
