To celebrate the fact that I’m this lazy, I decided to make breakfast for dinner. Not just any breakfast however! I decided to go for a tofu scramble with sautéd vegetables. This was a revelation! I’ve made a few scrambles before, but none this good, and this quickly. The key words are good and quickly, since a) I’m quite busy binge watching Friends, and b) I’m lazy.
To make your own 5 minute feast, you will need
- Half a brick of firm tofu, shredded with a cheese grater
- 1/4 tsp. turmeric
- 1/2 tsp. garam masala
- 1 tsp. chili powder
- 1 tsp. garlic powder
- Pinch salt
- Almost wrinkly veggies in your fridge, chopped and diced
- Handful of spinach (or kale)
Shred your tofu and add your spices, then fry it up in a frying pan. When fried to your liking, place into a serving dish until you’re ready to serve. Sauté the chopped veggies and once they are cooked to your satisfaction, plate up!
Tonight’s dinner was half a wrinkly zucchini, 5 cremini mushrooms, a quarter of a bell pepper, and a handful of spinach.
This made enough for dinner for one person, but can be easily halved for breakfast for two. The garam masala in the spice mix is on the sweet side, which makes this tofu scramble perfect for breakfasts or brunches.
Also, shredded tofu looks a lot like scrambled eggs, especially with the turmeric that gives a warm yellow color. Seriously, you could almost fool anyone with this vegan dish! For those that like it spicier, squirt some hot sauce on the scramble, and you’re all set to go!
