#PSL Inspired Cookies

Before everybody gets crazy about Christmas this and Christmas that, I have one last pumpkin inspired recipe that I really want to share. #PSL for the win!

It’s a basic oatmeal cookie with a twist. Wait for it… Yeah you know, pumpkin spice oatmeal cookies! They are chewy, gooey, delicious! And almost healthy.

You will need

  • 1 to 2 tsp. homemade pumpkin spice mix (see this link for recipe)
  • 2 1/4 cup of rolled oats
  • 2/3 cup of gluten free flour
  • 3/4 cup of softened unsalted butter
  • 1 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 giant tbsp. of plain yogurt

With an electric mixer, beat the sugar, butter, vanilla, and yogurt until nice and smooth. Add in the dry ingredients and stir until combined.

Place on a cookie sheet lined with parchment paper, and bake for 15 minutes until the cookies are slightly golden.

Transfer them to a cooling rack and then let them cool for a few minutes before enjoying a pumpkin spice crunchy sweet delicious treat.DSC_0283 copy
