#midweek meal: Zucchini fritters

Don’t you hate it when you open the door to the fridge and have absolute no idea what to make? Having a full or near empty fridge does not mean instant creativity.

Well, sometimes. Like the time I really wanted a turkey burger but had to turkey and no burgers, only limp zucchini and an onion lying on a fridge shelf. You don’t know how creative you can get, until you’re faced with an empty fridge and a growling stomach.

Turns out, that zucchini and that onion were enough to make 13 delicious zucchini “fritters” or “burgers”, and paired with a salad and rice, they make a most perfect meal!

Try these yummy patties next time your don’t know what to do with that limp zucchini!

You will need

  • 1 to 2 zucchinis, washed
  • 1 onion, minced
  • 1//2 to 2/3 cup of flour
  • salt and pepper to taste
  • fine herbs, to taste
  • glug of olive oil

Grate your zucchini with either a grater or a food processor fitted with a grater blade. You’ll want the zucchini strips to be medium to large.

Next, mince your onion finely.

In a large mixing bowl, toss together the zucchini, onion, flour, herbs and spices, and oil, and mix really well, with your hands, until everything is combined. Form patties the size of your palm, and about an inch thick.

In a non-stick pan, cook the patties about 4 minutes on each side, until the sides are properly seared.

There you go. No more than 10 minutes!
