R Rated Strawberry, Black Pepper & Basil Popsicles

“Summer is here”… well you could have fooled me! We’re in Quebec City for the week for the Festival d’Été de Québec (a big music fest) and since arriving here last Thursday, we have gone through all possible weather.

I knew I had to bring my rain jacket, because Québec City is the Canadian version of Chicago… aka Windy City. But frost and temperatures between 5 and 10 degrees Celsius caught me off guard!

The upside of this is that there’s a mega heat wave in effect, with temperatures hitting 42 degrees (with the humidity), so we can jump into that freezing pool and actually cool off!

In preparation of this mega huge heatwave, we decided to come up with a treat that will not only cool you down, but pick you up at the same time! My girlfriend’s mom makes this super yummy strawberries-infused-in-alcohol-with-whipped-cream dessert that we thought it would be great to turn it into a frozen delight. Trust us when we say, you really want to get in on this action!

We dug out some old Popsicle molds from my girlfriend’s childhood, pulled out the alcohol, and had ourselves a party!


The measurements are for molds that hold 1/4 cup (60ml) of liquid, but allows for expansion!

You will need, for the liquid for 6 popsicle molds

  • 1 cup of milk
  • 6 tbsp. of coconut milk or cream

Mix in a bowl and set aside.

For the strawberries

  • 1 cup of strawberries, chopped into small slices
  • 1 oz of Sambuca (Ricard or Pastis will do)
  • 1/4 to 1/2 oz of Grand Marnier (Cointreau or Triple Sec will do)
  • 1 to 2 tbsp. of sugar
  • 3 to 4 leaves of basil or mint, finely chopped
  • freshly cracked pepper (you want to be able to taste them, so go for about 1/2 tbsp.)

Mix in a bowl and let steep/macerate for 20 minutes.

The assembling part is quite easy. Start by spooning in some strawberries and their juices into a popsicle mold. Add in some of the milk mix, and alternate until reaching the top.

Make sure to leave a bit of space so that when it expands in the freezer, it wont overflow.

Freeze them overnight, and enjoy when you need a pick-me-up!

You could also place all the ingredients in a blender, blend away and then freeze them… But I like the effect of having chunks of strawberries throughout the mix!

REMINDER: These popsicles contain alcohol, therefore are NOT suitable for children!!!!!
